Name: Teriyaki Chicken

Ingredients:
1kg chicken fillets
4 tbs Japanese soy sauce
4 tbs irin or sherry
2 tbs sugar
1 tsp crushed garlic
2 tsp ginger, finely grated
1/2 tsp oriental sesame oil
Method:
Dice chicken fillets. Combine remaining ingredients and marinate chicken, covered for 1 hour or overnight. Thread chicken on to skewers that have been soaking in water to prevent them from burning.
Preheat grill and place chicken on oild foil. Grill, turning chicken and basting with marinade for about 5 minutes or until cooked. Reduce marinade by cooking in an uncovered pan and pour over as a glaze.
