Name: Beef Rendang

Ingredients:
- 1.5kg lean stewing beef, cut into strips
2 onions, chopped
2 tbs garlic, finely chopped
1 tbs ginger, finely chopped
1 tbs galangal, fresh or bottled
6 red chillies, seeded
400 mL coconut milk
1 tsp salt
1 tsp ground turmeric
2 tsp chilli powder
3 tsp ground coriander
1 tsp ground cumin
1/2 tsp ground ginger
1 stick fresh lemon grass, bruised
125mL tamarind liquid
2 tsp sugar
Method:
Place beef in to a large, heavy saucepan. Put onion, garlic, ginger, galangal, chillies and 1/2 cup water into a blender. Cover and blend until smooth. Add to meat and add all other ingredients except tamarind liquid and sugar. Mix well and bring to the boil, uncovered.
Reduce heat, add tamarind liquid and simmer uncovered until thickened. Stir occasionally.
Simmer for about 2 hours or until oil separates from the gravy. Add sugar and stir constantly.
Tips:
Serve with rice and vegetable dishes.
