Name: Chicken and Cabbage Salad

500g chicken thigh fillets
Salt and pepper
1 small Chinese cabbage
1 tsp salt
3 tbs sugar
3 tbs fish sauce
4 tbs lime juice
1 tbs white vinegar
30gms Vietnamese mint or normal mint, chopped
30gms Coriander, chopped
Trim chicken fillets and place in a saucepan with water to cover, add salt and pepper and bring to a simmer. Cover and cook and allow to cool in liquid.
Shred cabbage finely. Put in a large bowl, cover and chill.
Peel onions and slice thinly. Sprinkle with salt and combine well. Leave for 30 minutes and rinse well and squeeze out juices. Add half the sugar and mix.
In another bowl combine remaining sugar, fish sauce, lime juice and vinegar. Slice the cooled chicken into thin strips. Just before serving toss and mix chicken, cabbage, onion, dressing mint and coriander.
