Crunchy Chinese Cabbage Salad

Ingredients
1/2 medium Chinese cabbage, shredded
6 green shallots, sliced
2 sticks Chinese celery, chopped
1/3 cup sunflower seeds, toasted
1 x 100g pkt fried noodles
60g flaked almonds, toasted

Dressing

1/2 cup olive oil
1/4 cup white vinegar
1/4 cup brown sugar
2 tsp soy sauce

Method

  1. Combine all ingredients of the dressing in a screw top jar and shake well.
  2. In a large bowl, combine all other ingredients.
  3. Just before serving add dressing and toss well.
  4. Transfer to an attractive serving dish.
